Deviled Crabs

1 lb crab meat                
½ c chopped celery       
¼ c chopped green pepper
2 eggs (hard cooked)     
½ c bread crumbs          
2 T butter
1 tsp Worcestershire sauce                                   
1 c thick white sauce
Prepare thick white sauce
:
4 T butter            
4 T flour            
1 c milk
Blend in saucepan. Once boiling, add crab meat, celery, and green pepper. Remove from heat and add hard boiled eggs (chopped) and Worcestershire sauce. Place mixture in greased muffin tins or individual crab shells. Sprinkle bread crumbs and butter over top. Bake in moderate oven (350-375º) until crumbs are brown.

 

Deviled Crabs

8 oz can crab meat           
3 green peppers          
½ stalk celery
5 carrots                          
2 onions                      
3 eggs, hard boiled
¼ stick margarine             
1 qt milk                      
flour
½ loaf bread          
eggs, milk, cracker crumbs, and bread crumbs for dredging
Grind peppers, celery, carrots, and onions then steam vegetables in a frying pans with margarine. Make the white sauce by thickening quart of milk in a saucepan with flour. Mix vegetable, diced hard boiled eggs, white sauce, and crab meat. Season with salt and pepper then add the bread, diced finely. Chill in refrigerator. Taking about 2" balls of mixture at a time, roll in egg and milk beaten together, then in cracker crumbs. Roll again in egg mixture then in bread crumbs. Deep fry until browned.

Fish Cakes
Brenda Ruth Garber Neifert

About 2 lbs. trout or other favorite fish
Dice:
2 ribs celery   
1 medium onion     
1 small green pepper         
5 hard boiled eggs
Mix with: 
   3 large potatoes (mashed)                    
1/3 c or more parsley        
salt to taste
After mixing ingredients, add bread crumbs to stiffen if necessary and chill 2 hours or overnight. Form patties, dip in flour, then milk, beaten egg, and finally bread crumbs. Fry in oil until golden brown.
